Roasted spicy pumpkin seeds
Give R and I two pumpkins and what do you get? Well, it's funny how the finished results totally reflect our different personalities. Can you guess which one is mine?
Even though the pumpkins were small, we had quite a lot of pumpkin seeds. So I whipped up this easy recipe for roasted spicy pumpkin seeds. You won't be able to stop snacking on these tasties.
Preheat oven to 300 degrees F. Wash and dry the pumpkin seeds. Melt 2 tablespoons butter and add 1 teaspoon chili powder, 1/2 teaspoon paprika, 1/2 teaspoon cayenne powder, salt to taste. Pour mixture over pumpkin seeds and toss to coat evenly. Spread pumpkin seeds in a single layer on a baking sheet and bake until golden brown, approximately 20-30 minutes, stirring occasionally.
